- 100 g Coriander Leaves
- 100 g Garlic
- loose Ginger
- 500 g Onion
- - Bell Peppers
- 200 g Organic Tofu - Soy Paneer
- medium Chilli Green Long
- 500 G Preserved Dried Salted Black Beans
- 90 g Dark Soy Sauce
- 500 g Sugar
- 500 Ml Champion Oil
Instructions
- 1. Gather all ingredients: 200g firm tofu, 2 tbsp fermented black beans, 1 medium onion, 1 medium bell pepper, 2 garlic cloves, 1-inch piece of ginger, 2 green chillies, 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sugar, 1 tbsp vegetable oil, and fresh coriander for garnish.
- 2. Press the tofu to remove excess moisture: Wrap the tofu block in a clean kitchen towel and place a heavy object on top for 15 minutes.
- 3. Prepare the vegetables: Slice the onion and bell pepper into thin strips. Finely chop the garlic, ginger, and green chillies.
- 4. Cut the pressed tofu into 1-inch cubes.
- 5. Heat 1 tbsp of vegetable oil in a large non-stick pan or wok over medium heat.
- 6. Add the tofu cubes to the pan and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu and set aside.
- 7. In the same pan, add a little more oil if needed, and sauté the chopped garlic, ginger, and green chillies for 1 minute until fragrant.
- 8. Add the sliced onions and bell peppers to the pan and stir-fry for 3-4 minutes until they start to soften.
- 9. Rinse the fermented black beans under cold water to remove excess salt, then mash them slightly with the back of a spoon.
- 10. Add the mashed black beans to the pan and stir well to combine with the vegetables.
- 11. Return the tofu cubes to the pan and gently mix with the vegetables and black beans.
- 12. In a small bowl, mix together the soy sauce, rice vinegar, and sugar. Pour this sauce over the tofu and vegetables.
- 13. Stir-fry everything together for another 2-3 minutes, ensuring the tofu and vegetables are well coated with the sauce.
- 14. Taste and adjust seasoning if needed, but be cautious with salt as the black beans are already salty.
- 15. Garnish with freshly chopped coriander leaves.
- 16. Serve hot with steamed rice or noodles for a complete meal.
