  • 100 g Coriander Leaves
  • 100 g Garlic
  • loose Ginger
  • 500 g Onion
  • - Bell Peppers
  • 200 g Organic Tofu - Soy Paneer
  • medium Chilli Green Long
  • 500 G Preserved Dried Salted Black Beans
  • 90 g Dark Soy Sauce
  • 500 g Sugar
  • 500 Ml Champion Oil

Instructions

  1. 1. Gather all ingredients: 200g firm tofu, 2 tbsp fermented black beans, 1 medium onion, 1 medium bell pepper, 2 garlic cloves, 1-inch piece of ginger, 2 green chillies, 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sugar, 1 tbsp vegetable oil, and fresh coriander for garnish.
  2. 2. Press the tofu to remove excess moisture: Wrap the tofu block in a clean kitchen towel and place a heavy object on top for 15 minutes.
  3. 3. Prepare the vegetables: Slice the onion and bell pepper into thin strips. Finely chop the garlic, ginger, and green chillies.
  4. 4. Cut the pressed tofu into 1-inch cubes.
  5. 5. Heat 1 tbsp of vegetable oil in a large non-stick pan or wok over medium heat.
  6. 6. Add the tofu cubes to the pan and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu and set aside.
  7. 7. In the same pan, add a little more oil if needed, and sauté the chopped garlic, ginger, and green chillies for 1 minute until fragrant.
  8. 8. Add the sliced onions and bell peppers to the pan and stir-fry for 3-4 minutes until they start to soften.
  9. 9. Rinse the fermented black beans under cold water to remove excess salt, then mash them slightly with the back of a spoon.
  10. 10. Add the mashed black beans to the pan and stir well to combine with the vegetables.
  11. 11. Return the tofu cubes to the pan and gently mix with the vegetables and black beans.
  12. 12. In a small bowl, mix together the soy sauce, rice vinegar, and sugar. Pour this sauce over the tofu and vegetables.
  13. 13. Stir-fry everything together for another 2-3 minutes, ensuring the tofu and vegetables are well coated with the sauce.
  14. 14. Taste and adjust seasoning if needed, but be cautious with salt as the black beans are already salty.
