Ingredients
- 250 ml Dabur Hommade Lemon Juice (Bottle)
- 500 ml Oleev Olivana Natural Olive Oil (Tin)
- 500 g Pluckk Organic Hybrid Tomatoes
- 25 g Parsley
- 1 Bunch Nectr Mint Leaves (Chemical Free)
- 1 pc (50 g) On1Y Pepper Grinder
- 500 G Kinwaaquinoa
- 100 g Catch Sprinklers - Iodized Table Salt
- 250 g Spring Onion
Instructions
- 1. In a large earthenware casserole with a lid, combine 2 cups of cracked wheat and 1 teaspoon of salt.
- 2. Pour boiling water over the cracked wheat until fully covered, then place the lid on and let it sit for 45 minutes.
- 3. While the wheat is soaking, finely chop 1/2 cup parsley, 1/4 cup mint, and 1/2 cup scallion. Dice 2 tomatoes.
- 4. Once the wheat has absorbed the water, drain any excess liquid and fluff the wheat with a fork.
- 5. In a large mixing bowl, combine the prepared cracked wheat with the chopped parsley, mint, scallion, and diced tomatoes.
- 6. Drizzle 3/4 cup of lemon juice and 1 cup of olive oil over the mixture. Add 1/2 teaspoon of pepper and toss everything together until well combined.
- 7. Cover the bowl and let the salad marinate in the refrigerator for 1 hour before serving.
