Ingredients

  • 250 ml Dabur Hommade Lemon Juice (Bottle)
  • 500 ml Oleev Olivana Natural Olive Oil (Tin)
  • 500 g Pluckk Organic Hybrid Tomatoes
  • 25 g Parsley
  • 1 Bunch Nectr Mint Leaves (Chemical Free)
  • 1 pc (50 g) On1Y Pepper Grinder
  • 500 G Kinwaaquinoa
  • 100 g Catch Sprinklers - Iodized Table Salt
  • 250 g Spring Onion

Instructions

  1. 1. In a large earthenware casserole with a lid, combine 2 cups of cracked wheat and 1 teaspoon of salt.
  2. 2. Pour boiling water over the cracked wheat until fully covered, then place the lid on and let it sit for 45 minutes.
  3. 3. While the wheat is soaking, finely chop 1/2 cup parsley, 1/4 cup mint, and 1/2 cup scallion. Dice 2 tomatoes.
  4. 4. Once the wheat has absorbed the water, drain any excess liquid and fluff the wheat with a fork.
  5. 5. In a large mixing bowl, combine the prepared cracked wheat with the chopped parsley, mint, scallion, and diced tomatoes.
  6. 6. Drizzle 3/4 cup of lemon juice and 1 cup of olive oil over the mixture. Add 1/2 teaspoon of pepper and toss everything together until well combined.
  7. 7. Cover the bowl and let the salad marinate in the refrigerator for 1 hour before serving.
