- 100 g Lemon Grass
- 250 g Carrot
- 1 pack Mushrooms Button
- - Vegetable Stock Cubes
- 1 pc Broccoli
- 250 g French Beans
- 250 gm Sweet Corn Kernels
- 1 Lime - 1 Each
- 80 g Soya Sauce
- 50 g Red Curry Paste
- 200 g Table Salt
Instructions
- Prepare the vegetables: Wash the french beans, broccoli, and carrot thoroughly. Chop the french beans into 1-inch pieces, cut the broccoli into small florets, and slice the carrot into thin rounds.
- Clean the mushrooms: Rinse the button mushrooms under running water and slice them thinly.
- Simmer the broth: In a large pot, bring 4 cups of water to a boil. Add 2-3 vegetable stock cubes, and stir until dissolved.
- Add aromatics: Crush the lemon grass and add it to the pot. Allow the flavors to infuse for about 5 minutes.
- Cook the vegetables: Add the chopped french beans, carrot slices, broccoli florets, and sweet corn kernels to the pot. Let them simmer for about 5-7 minutes until tender but still crisp.
- Incorporate mushrooms: Toss in the sliced mushrooms, and allow them to cook for another 3-4 minutes.
- Flavor the soup: Add 50 grams of red curry paste and mix well. Pour in 1 tablespoon of soya sauce and 1 tablespoon of white cooking vinegar. Stir the mixture thoroughly.
- Adjust seasoning: Taste the soup and add table salt as per your preference.
- Simmer and serve: Let the soup simmer for a couple more minutes, then remove from heat. Serve hot, garnished with fresh herbs if desired.
