Ingredients

  • - Vegetable Stock Cubes
  • 2 pcs Zucchini
  • 500g Celery
  • 250 G Leeks(250 Gm)
  • 200 g Green Peas
  • 250g Parsley
  • 500 Gms Pearl Barley
  • 18 g Thyme
  • - Bay Leaf
  • 250 Ml Selektia Tartufi Extra Virgin Olive Oil
  • 250g Garlic
  • 10G Salt
  • 50 g Black Pepper

Instructions

  1. Step 1: Heat 1 tablespoon olive oil in a large deep pan over medium heat. Add the minced garlic, sliced leeks, and chopped celery. Sauté for 2-3 minutes until fragrant.
  2. Step 2: Add the diced carrots, zucchini, and sliced mushrooms. Cook for another 5 minutes, stirring occasionally.
  3. Step 3: Stir in the rinsed pearl barley and sauté for 1-2 minutes to lightly toast it.
  4. Step 4: Add the blanched and chopped tomatoes, green peas, thyme, bay leaf, and vegetable stock. Mix well.
  5. Step 5: Bring the mixture to a boil, then reduce to a simmer. Cover and cook for 30-35 minutes, stirring occasionally, until the barley is tender and the liquid has reduced into a stew-like consistency.
  6. Step 6: Remove the bay leaf. Adjust salt and freshly ground black pepper to taste.
  7. Step 7: Drizzle the remaining olive oil over the hotpot and garnish with freshly chopped parsley. Serve warm.
