Ingredients
- - Vegetable Stock Cubes
- 2 pcs Zucchini
- 500g Celery
- 250 G Leeks(250 Gm)
- 200 g Green Peas
- 250g Parsley
- 500 Gms Pearl Barley
- 18 g Thyme
- - Bay Leaf
- 250 Ml Selektia Tartufi Extra Virgin Olive Oil
- 250g Garlic
- 10G Salt
- 50 g Black Pepper
Instructions
- Step 1: Heat 1 tablespoon olive oil in a large deep pan over medium heat. Add the minced garlic, sliced leeks, and chopped celery. Sauté for 2-3 minutes until fragrant.
- Step 2: Add the diced carrots, zucchini, and sliced mushrooms. Cook for another 5 minutes, stirring occasionally.
- Step 3: Stir in the rinsed pearl barley and sauté for 1-2 minutes to lightly toast it.
- Step 4: Add the blanched and chopped tomatoes, green peas, thyme, bay leaf, and vegetable stock. Mix well.
- Step 5: Bring the mixture to a boil, then reduce to a simmer. Cover and cook for 30-35 minutes, stirring occasionally, until the barley is tender and the liquid has reduced into a stew-like consistency.
- Step 6: Remove the bay leaf. Adjust salt and freshly ground black pepper to taste.
- Step 7: Drizzle the remaining olive oil over the hotpot and garnish with freshly chopped parsley. Serve warm.
