Ingredients
- 500 g Onion
- 250 g Carrot
- - Bell Peppers
- - Besan
- 1 pc (approx. 500 g to 800 g) Cabbage
- 200 g Tamarind Date Chutney
- 200 g Table Salt
- 50 g Cumin Powder
- 20 g Turmeric Powder
- 500 Ml Champion Oil
Instructions
- 1. Prepare the vegetable filling by finely chopping 1/2 cup of cabbage, 1/2 cup of carrots, 1/4 cup of onions, and 1/4 cup of bell peppers.
- 2. Heat 1 tablespoon of Champion Oil in a pan over medium heat (approximately 350°F/175°C) and sauté the chopped vegetables for 3-4 minutes until tender. Season with 1/2 teaspoon of turmeric powder, 1/2 teaspoon of cumin powder, and salt to taste. Set the filling aside to cool.
- 3. Prepare the chapati dough by mixing 1 cup of wheat flour (whole wheat flour is recommended for authenticity and health benefits), a pinch of table salt, and 1/2 cup of water in a bowl. Knead until smooth, then let it rest for 10 minutes.
- 4. While the dough is resting, prepare the chickpea batter by whisking 1/2 cup of besan with 1/4 cup of water, 1/4 teaspoon of turmeric powder, and a pinch of salt. The batter should be of a pourable consistency, similar to pancake batter, to ensure proper coating.
- 5. Divide the rested dough into 2 equal portions and roll each into a thin circle using a rolling pin. Aim for a diameter of about 8 inches.
- 6. Heat a non-stick pan or tawa over medium heat (approximately 350°F/175°C) and cook each chapati for 2 minutes on each side or until golden brown spots appear. Set the cooked chapatis aside.
- 7. Spread the chickpea batter evenly over one side of each chapati using a spoon or brush. Place the chapati back on the pan, batter-side down, and cook for 1 minute until the batter sets and forms a light crust.
- 8. Place a generous portion of the sautéed vegetable filling on the chickpea-coated side of each chapati. Drizzle with tamarind date chutney for added flavor.
- 9. Roll the chapati tightly to form the Ugandan Rolex.
