- 250g Garlic
- 250g Parsley

- 500g Cucumber

Instructions
- Step 1: In a mixing bowl, combine ground lamb, red onion, garlic, parsley, cumin, smoked paprika, coriander, salt, and pepper. Mix well and shape into small oval-shaped koftas.
- Step 2: Heat a skillet or grill pan over medium heat. Cook the koftas for 8-10 minutes, turning occasionally, until browned and cooked through.
- Step 3: In a saucepan, melt the butter over medium heat and add the rinsed bulgur wheat. Toast for 2 minutes, then stir in the tomato paste.
- Step 4: Add the chicken stock to the saucepan. Cover and let it simmer for 15-20 minutes, or until the bulgur absorbs the liquid and becomes tender.
- Step 5: Prepare the cucumber-yogurt salad by mixing sliced cucumber, Greek yogurt, mint leaves, and lemon juice in a bowl. Adjust seasoning with a pinch of salt and pepper.
- Step 6: Plate the lamb koftas alongside the bulgur pilaf and cucumber-yogurt salad. Garnish with extra parsley or mint if desired.
