A traditional Odia dish featuring fermented rice (Pakhala) paired with a nutrient-rich coconut-paneer Dalma, balanced with spices and aromatic flavors.
Ingredients
- 500 G Ridge Gourd/Jhinge Tori(500Gm)
- - Red Chilli
- 250g Green Chilli
- 500 ml Water
- 400 g Curd
- 200 g Paneer
- - Grated Coconut
- 500 g Rice
- 200 ml Mustard Oil
- 20 g Turmeric Powder
- 250g Ginger
- 250g Coriander
- 10G Salt
- 1 pack (100 g) Zoff Panch Phoran Whole
Instructions
- Step 1: Prepare the Pakhala by soaking the cooked rice in water with curd. Adjust salt as needed. Leave it to ferment for 4-6 hours or overnight.
- Step 2: Heat mustard oil in a pan. Add panch phoran and let it splutter.
- Step 3: Add grated ginger, green chilies, turmeric powder, and red chili powder to the pan. Sauté for 1 minute.
- Step 4: Add boiled chana dal, drumsticks, and ridge gourd to the pan. Cook for 5-7 minutes until vegetables are tender.
- Step 5: Stir in the cubed paneer and grated coconut. Simmer for another 5 minutes until the flavors meld together.
- Step 6: Garnish with finely chopped coriander leaves. Serve the coconut-paneer Dalma alongside fermented rice (Pakhala).
