- 200 ml Mustard Oil
- 100 g Popular Essentials Jeera (Cumin Seeds)
- 500 g Onion
- 500 g Desi Tomato (Tamatar)
- medium Chilli Green Long
- - Garlic Powder
- - Ginger Powder
- 20 g Turmeric Powder
- 100 g Catch Super Garam Masala
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- 250 ml Keya Lemon Juice
- - DELI QUINOA/BASMATI RICE 1KG
- 100 g Diet Tofu Masala Tofu
- - Frozen Mixed Vegetables
Instructions
- 1. Rinse the rice under cold water and soak for 15 minutes before cooking.
- 2. In a medium pot, combine rice with 300ml water and a pinch of salt. Cook on medium heat until water is absorbed and rice is tender.
- 3. While the rice cooks, cut the tofu into bite-sized cubes and finely chop onion, tomatoes, and green chilies.
- 4. Heat oil in a large skillet and add cumin seeds. Let them sizzle for 30 seconds to release their aroma.
- 5. Add chopped onion, stir, and sauté until golden brown, about 5 minutes.
- 6. Stir in garlic powder, ginger powder, turmeric, and garam masala, cooking for another minute to toast the spices.
- 7. Add tomatoes and green chilies, cooking until the tomatoes break down and form a thick sauce, about 5 minutes.
- 8. Toss the tofu cubes into the skillet, stirring to coat them evenly in the sauce.
- 9. Add the mixed vegetables to the skillet, stirring well to combine. Cook for 5-7 minutes, until vegetables are tender but not mushy.
- 10. Adjust salt and stir in lemon juice for a fresh, tangy finish.
