A rich and flavorful tofu and spinach dish simmered in a mildly spiced tomato-based gravy, perfect for a hearty and healthy dinner.
Ingredients
- 250 g Spinach
- - Baby Tomatoes
- 20 g Turmeric Powder
- 100 g Jeera
- - Red Chilli
- 45 g Garam Masala
- 200 ml Coconut Milk
- 1 liter Sunflower Oil
- 100 g Salt
- - Coriander Powder
Instructions
- 1. Wash and chop the spinach finely, then set aside for later use.
- 2. Cut the tofu into bite-sized cubes and gently pat them dry with a paper towel.
- 3. Heat the sunflower oil in a pan and fry the tofu pieces until golden on all sides; remove and set aside.
- 4. In the same pan, add cumin seeds and let them splutter for a few seconds.
- 5. Add the finely chopped onions and sauté until they turn golden brown.
- 6. Stir in the ginger-garlic paste and cook for 1-2 minutes until aromatic.
- 7. Add the chopped tomatoes and cook until they soften, then mash them slightly with a spoon.
- 8. Mix in turmeric, coriander powder, red chili powder, and salt, and cook for another 2 minutes.
- 9. Add the chopped spinach to the pan, cover, and let it cook until the spinach wilts down.
- 10. Pour in the coconut milk, stir well, and simmer for 5 minutes on medium heat.
- 11. Return the fried tofu to the pan, mix gently, and cook for another 3 minutes to absorb the flavors.
- 12. Sprinkle garam masala on top and stir well before turning off the heat.
- 13. Garnish with freshly chopped coriander leaves and serve hot with steamed brown rice or quinoa.
