- 250 g Spinach
- 200 ml Coconut Milk
- 500 g Onion
- - Tomato Ketchup
- 100 g Garlic
- loose Ginger
- 250g Green Chilli
- 100 g Dhaniya Powder
- 100 g Jeera
- 100 g Salt
- - Coriander Powder
Instructions
- 1. Press and cube the tofu into bite-sized pieces, then pat dry with a paper towel.
- 2. Heat vegetable oil in a large pan and add cumin seeds, letting them sizzle for 30 seconds.
- 3. Add chopped onion, garlic, and ginger to the pan; sauté until golden and fragrant.
- 4. Stir in diced tomatoes, turmeric, coriander powder, and green chili; cook until the mixture thickens.
- 5. Add fresh spinach and sauté for 2 minutes, allowing it to wilt slightly.
- 6. Pour in coconut milk and mix well, creating a creamy sauce for the stir-fry.
- 7. Add tofu cubes to the pan and gently fold them into the sauce; simmer for 5 minutes.
- 8. Adjust salt to taste and cook for another 2 minutes to blend the flavors.
- 9. Garnish with chopped fresh coriander leaves and remove from heat.
- 10. Serve hot with steamed rice or enjoy as is for a lighter meal.
