Ingredients

  • - DELI QUINOA/BASMATI RICE 1KG
  • 100 g Diet Tofu Masala Tofu
  • 200 g Spinach (Palak)
  • 250 ml Real Thai Unsweetened Coconut Milk
  • 500 ml Oil (For Frying)
  • 500 g Onion
  • 110 g Unpeeled Garlic Cloves
  • - Cumin Seed
  • - Dhaniya Powder | Freshly Ground Coriander | Citrusy & Fragrant | Pure Spice For Everyday Cooking | No Additives
  • loose Ginger
  • - Cinnamon Powder-10 Gm
  • Loose Cardamom
  • 1 pack (50 g) Town Grocer Bay Leaf/Tej Patta
  • 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
  • 250 ml Keya Lemon Juice

Instructions

  1. 1. Rinse the rice thoroughly and soak it in water for 20 minutes, then drain and set aside.
  2. 2. Heat 1 tablespoon of oil in a large pan and lightly fry the tofu cubes until golden on all sides. Remove and set aside.
  3. 3. In the same pan, add the remaining oil, and sauté the chopped onion until soft and translucent.
  4. 4. Add the minced garlic and sauté for another minute until fragrant.
  5. 5. Stir in the cumin powder, coriander powder, ginger powder, cinnamon powder, cardamom powder, and the bay leaf. Cook for 1-2 minutes.
  6. 6. Add the spinach leaves and cook until wilted, about 2-3 minutes, stirring frequently.
  7. 7. Mix in the soaked rice and lightly toss it with the spices and spinach mixture.
  8. 8. Pour in the coconut milk, water, and salt. Stir well and bring to a boil.
  9. 9. Reduce the heat to low, cover the pan with a tight-fitting lid, and let it simmer for 15 minutes or until the rice is fully cooked.
  10. 10. Remove the lid, fluff the rice gently with a fork, and stir in the fried tofu cubes.
  11. 11. Drizzle with lemon juice, mix gently, and let it rest for 5 minutes before serving.
