- 100 g Diet Tofu Masala Tofu
- 200 g Spinach (Palak)
- 250 ml Real Thai Unsweetened Coconut Milk
- 500 ml Oil (For Frying)
- 500 g Onion
- 110 g Unpeeled Garlic Cloves
- - Cumin Seed

- Loose Cardamom
- 1 pack (50 g) Town Grocer Bay Leaf/Tej Patta
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- 250 ml Keya Lemon Juice
Instructions
- 1. Rinse the rice thoroughly and soak it in water for 20 minutes, then drain and set aside.
- 2. Heat 1 tablespoon of oil in a large pan and lightly fry the tofu cubes until golden on all sides. Remove and set aside.
- 3. In the same pan, add the remaining oil, and sauté the chopped onion until soft and translucent.
- 4. Add the minced garlic and sauté for another minute until fragrant.
- 5. Stir in the cumin powder, coriander powder, ginger powder, cinnamon powder, cardamom powder, and the bay leaf. Cook for 1-2 minutes.
- 6. Add the spinach leaves and cook until wilted, about 2-3 minutes, stirring frequently.
- 7. Mix in the soaked rice and lightly toss it with the spices and spinach mixture.
- 8. Pour in the coconut milk, water, and salt. Stir well and bring to a boil.
- 9. Reduce the heat to low, cover the pan with a tight-fitting lid, and let it simmer for 15 minutes or until the rice is fully cooked.
- 10. Remove the lid, fluff the rice gently with a fork, and stir in the fried tofu cubes.
- 11. Drizzle with lemon juice, mix gently, and let it rest for 5 minutes before serving.
