Ingredients

  • 500 ml Oil (For Frying)
  • 100 g Popular Essentials Jeera (Cumin Seeds)
  • 500 g Onion
  • 1 pack (100 g) Everest - Ginger Garlic Paste
  • medium Chilli Green Long
  • 500 g Desi Tomato (Tamatar)
  • 20 g Turmeric Powder
  • - Coriander Powder
  • 100 g Catch Super Garam Masala
  • 250 ml Real Thai Unsweetened Coconut Milk
  • 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
  • 1 Bunch Coriander Leaves ( Kottambari Soppu )
  • - DELI QUINOA/BASMATI RICE 1KG
  • 100 g Diet Tofu Masala Tofu
  • 200 g So-Lite Masala Tofu

Instructions

  1. 1. Rinse the basmati rice well and soak it in water for 20 minutes, then drain and set aside.
  2. 2. Heat 1 tablespoon of vegetable oil in a pan, add cumin seeds, and let them sizzle for a few seconds.
  3. 3. Add chopped onions and sauté until golden brown, stirring occasionally to prevent burning.
  4. 4. Stir in the ginger-garlic paste and finely chopped green chilies, cooking for 1-2 minutes until aromatic.
  5. 5. Add diced tomatoes, turmeric powder, coriander powder, and garam masala, cooking until the tomatoes are soft and the mixture is well combined.
  6. 6. Pour in the coconut milk and 200 ml of water, then bring the mixture to a boil over medium heat.
  7. 7. Add the soaked rice and salt, cover the pan with a lid, and reduce the heat to low. Cook for 15 minutes or until the rice is tender.
  8. 8. While the rice cooks, heat the remaining 1 tablespoon of oil in another pan and add cubed tofu.
  9. 9. Toss the tofu with a pinch of turmeric and salt, then sauté until golden and slightly crisp on all sides.
  10. 10. Once the rice is cooked, fluff it gently with a fork and let it rest for 5 minutes.
  11. 11. Serve the masala rice in bowls, topping each with the sautéed tofu and freshly chopped coriander leaves.
