About this recipe

A delicious and protein-packed breakfast featuring soft parathas stuffed with a flavorful tofu and spinach mixture, perfect for a hearty start to your day.

Ingredients

  • - Fresh Tofu
  • 250 g Spinach
  • 500 g Wheat Flour / Maida
  • 250g Green Chilli
  • 50 g Cumin Powder
  • - Coriander Powder
  • 100 g Salt
  • 200 ml Mustard Oil
  • 1pc Watermelon

Instructions

  1. 1. Rinse and chop the spinach finely, ensuring there are no stems in the mix.
  2. 2. Crumble the tofu into small pieces and set aside in a bowl.
  3. 3. Heat 1 tablespoon of oil in a pan and sauté the spinach for 2-3 minutes until wilted.
  4. 4. Add the crumbled tofu to the pan along with cumin powder, coriander powder, chopped green chilies, and salt. Stir well for 3 minutes.
  5. 5. Remove the mixture from heat and let it cool slightly before proceeding.
  6. 6. In a separate bowl, prepare the dough by mixing whole wheat flour with water and a pinch of salt. Knead until smooth and pliable.
  7. 7. Divide the dough into equal portions and roll each portion into a small ball.
  8. 8. Flatten each ball to form a small disc and place a spoonful of the tofu-spinach mixture at the center.
  9. 9. Fold the edges of the dough to seal the filling, then gently roll it into a paratha using a rolling pin.
  10. 10. Heat a skillet and cook each paratha for 2-3 minutes on each side, brushing with oil as needed for a golden crust.
  11. 11. Repeat the process with the remaining dough and filling to make all the stuffed parathas.
  12. 12. Serve the parathas hot with a side of chutney or yogurt for added flavor.
