Ingredients
- 1 kg Basmati Rice
- 500 g Onion
- - Tomato Ketchup
- 250g Green Chilli
- 100 g Jeera
- 20 g Turmeric Powder
- - Red Chilli
- 45 g Garam Masala
- 100 g Salt
- 1pc Watermelon
- - Coriander Powder
Instructions
- 1. Wash and soak the basmati rice in water for 20 minutes, then drain.
- 2. Heat oil in a deep pan and add cumin seeds, allowing them to crackle for a few seconds.
- 3. Add finely chopped onion and sauté until golden brown, stirring frequently.
- 4. Stir in the ginger-garlic paste and chopped green chili, cooking for another minute.
- 5. Add diced tomatoes and cook until they soften and blend with the onions.
- 6. Mix in turmeric, red chili powder, coriander powder, and garam masala, stirring well.
- 7. Add the tofu cubes and gently coat them with the spice mixture without breaking them.
- 8. Toss in the chopped spinach leaves and cook until they wilt down completely.
- 9. Stir in the soaked and drained rice, ensuring it is evenly mixed with the masala.
- 10. Pour in water and add salt, bringing the mixture to a gentle boil.
- 11. Reduce the heat to low, cover the pan, and cook for 15 minutes or until the rice is tender.
- 12. Turn off the heat and let the dish rest, covered, for 5 minutes to allow the flavors to meld.
- 13. Fluff the rice gently with a fork and garnish with freshly chopped cilantro before serving.
- 14. Serve hot, pairing it with a side of your favorite cooling raita if desired.
