Ingredients

  • - Tong Garden Cheddar N Jalapeno Chickpeas
  • - Tomato Ketchup
  • - Fresh Tofu
  • - Foxtail Millet Flour
  • - Red Onion Powder 50gm
  • - Coconut Oil
  • 100 g Jeera
  • 20 g Turmeric Powder
  • 45 g Garam Masala
  • - Coriander Powder
  • 100 g Salt

Instructions

  1. 1. Rinse and soak foxtail millet for 10 minutes and drain the water.
  2. 2. Heat coconut oil in a pan, add cumin seeds, and let them splutter for 30 seconds.
  3. 3. Add finely chopped onion and sauté until golden brown, about 4 minutes.
  4. 4. Stir in turmeric powder, chili powder, and garam masala, cooking for 1 minute.
  5. 5. Add diced tomatoes and cook until soft and pulpy, stirring occasionally for 5 minutes.
  6. 6. Add cooked chickpeas to the pan and mix well with the spices and tomato base.
  7. 7. In a separate pan, lightly pan-fry cubed tofu until golden on all sides, about 4 minutes.
  8. 8. Add soaked millet to the chickpea mixture and pour in 250ml of water.
  9. 9. Cover the pan and simmer until the millet is fully cooked and water is absorbed, approximately 15 minutes.
  10. 10. Gently fold in the pan-fried tofu and adjust salt to taste.
  11. 11. Garnish with freshly chopped coriander leaves before serving.
