- 1 kg Bell Peppers
- 1 bunch Spring Onion
- 100 g Garlic

- 50G Real Thai Canned Red Curry Paste (50g)

Instructions
- 1. Finely chop garlic, ginger, and spring onions; dice carrots and bell peppers into small pieces.
- 2. Heat coconut oil in a large pan or wok over medium heat until hot but not smoking.
- 3. Add garlic and ginger to the pan, sautéing for 30 seconds until fragrant.
- 4. Toss in diced carrots and bell peppers, stir-frying for 4-5 minutes until slightly tender.
- 5. Push the vegetables to one side and crack the eggs into the empty space; scramble them until just set.
- 6. Mix the scrambled eggs with the vegetables, ensuring even distribution of flavors.
- 7. Add the cooked jasmine rice to the pan and stir well to combine thoroughly.
- 8. Stir in red curry paste, coconut aminos, and lime juice, letting the flavors meld for 2-3 minutes.
