Ingredients

  • 1Kg Potato
  • - Green Peas
  • - Baby Tomatoes
  • 100 g Garlic
  • loose Ginger
  • 100 g Jeera
  • 20 g Turmeric Powder
  • - Red Chilli
  • - Coriander Powder
  • 200 ml Mustard Oil
  • 100 g Salt
  • 1pc Watermelon

Instructions

  1. 1. Peel and dice the potatoes into small cubes and set them aside.
  2. 2. Chop the onions, tomatoes, garlic, and ginger finely for the curry base.
  3. 3. Heat mustard oil in a pan and add cumin seeds, letting them splutter for a few seconds.
  4. 4. Add the chopped onions, garlic, and ginger to the pan and sauté until golden brown.
  5. 5. Stir in the tomatoes and cook until soft, forming a thick paste-like mixture.
  6. 6. Add turmeric powder, red chili powder, and coriander powder, mixing well to combine.
  7. 7. Pour in tamarind pulp and water, allowing the flavors to blend together for 3-4 minutes.
  8. 8. Add the diced potatoes and green peas, stirring to coat them in the spice mixture.
  9. 9. Cover the pan and cook on medium heat until the potatoes are tender and peas are cooked.
  10. 10. Season with salt and adjust the tanginess by adding more tamarind pulp if needed.
  11. 11. Garnish with fresh coriander leaves and stir gently before turning off the heat.
