Ingredients

  • 1 kg Basmati Rice
  • 100 g Tamarind Paste
  • 250 g Tendercuts Basa Boneless Fillet F&S
  • 200 ml Mustard Oil
  • 110 g Unpeeled Garlic Cloves
  • loose Ginger
  • medium Chilli Green Long
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • - Coriander Powder
  • 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
  • 1 Bunch Coriander Leaves ( Kottambari Soppu )

Instructions

  1. 1. Rinse the fish fillets thoroughly and pat dry with a clean cloth.
  2. 2. Mix tamarind pulp with turmeric, red chili powder, coriander powder, and a pinch of salt to form a marinade.
  3. 3. Coat the fish fillets evenly with the prepared marinade and let them rest for 15 minutes.
  4. 4. Wash the rice thoroughly and set it to cook in a pot with double the amount of water. Season with salt.
  5. 5. Heat oil in a pan over medium heat, then add finely chopped garlic, ginger, and green chilies for sautéing.
  6. 6. Once aromatic, place the marinated fish fillets in the pan and cook for 4-5 minutes per side until golden brown.
  7. 7. Add a little water to the pan and simmer the fish to ensure it absorbs the flavors for the next 5 minutes.
