- 200 G Sprouts Moong(200 Gm)
- - Baby Tomatoes
- 500 g Onion
- 100 g Garlic
- 250g Green Chilli
- 100 g Yellow Mustard Seeds
- 100 g Curry Leaves
- 20 g Turmeric Powder
- - Red Chilli
- 50 g Cumin Powder
- 200 ml Mustard Oil
- 100 g Salt
- 250 ml Lemon Juice Concentrate
Instructions
- 1. Wash and rinse the spinach leaves thoroughly, then chop them finely.
- 2. Heat oil in a pan and add mustard seeds; allow them to splutter.
- 3. Add curry leaves, chopped garlic, and green chilies to the pan; sauté until aromatic.
- 4. Stir in chopped onions and cook until they turn translucent.
- 5. Add the chopped tomatoes, turmeric powder, red chili powder, and cumin powder; mix well and cook until the tomatoes soften.
- 6. Toss in the moong sprouts and cook for 3-4 minutes, stirring occasionally.
- 7. Add the chopped spinach and salt; stir well and allow it to wilt for 2-3 minutes.
- 8. Squeeze fresh lemon juice over the stir-fry and mix thoroughly.
- 9. Let the stir-fry simmer for an additional minute to blend flavors before removing it from heat.
- 10. Serve warm with a side of steamed rice or enjoy as is for a wholesome meal.
