Ingredients

  • 200 G Sprouts Moong(200 Gm)
  • - Baby Tomatoes
  • 500 g Onion
  • 100 g Garlic
  • 250g Green Chilli
  • 100 g Yellow Mustard Seeds
  • 100 g Curry Leaves
  • 20 g Turmeric Powder
  • - Red Chilli
  • 50 g Cumin Powder
  • 200 ml Mustard Oil
  • 100 g Salt
  • 250 ml Lemon Juice Concentrate

Instructions

  1. 1. Wash and rinse the spinach leaves thoroughly, then chop them finely.
  2. 2. Heat oil in a pan and add mustard seeds; allow them to splutter.
  3. 3. Add curry leaves, chopped garlic, and green chilies to the pan; sauté until aromatic.
  4. 4. Stir in chopped onions and cook until they turn translucent.
  5. 5. Add the chopped tomatoes, turmeric powder, red chili powder, and cumin powder; mix well and cook until the tomatoes soften.
  6. 6. Toss in the moong sprouts and cook for 3-4 minutes, stirring occasionally.
  7. 7. Add the chopped spinach and salt; stir well and allow it to wilt for 2-3 minutes.
  8. 8. Squeeze fresh lemon juice over the stir-fry and mix thoroughly.
  9. 9. Let the stir-fry simmer for an additional minute to blend flavors before removing it from heat.
