Ingredients
- 250 g Spinach
- - Rice Flour
- 100 g Coriander Leaves
- 250g Green Chilli
- 100 g Jeera
- 20 g Turmeric Powder
- 100 g Salt
- 125 ml Flavoured Yogurt Drink - Mango
- 250 ml Lemon Juice Concentrate
- 100 g Garlic
Instructions
- 1. Wash and soak the green moong dal for 4-5 hours, then drain and rinse well.
- 2. Cook the dal in a pot with water until tender, then drain and set aside.
- 3. Heat oil in a pan, add cumin seeds, minced garlic, and green chilies, and sauté until fragrant.
- 4. Add chopped spinach, turmeric, and salt to the pan, and cook until the spinach wilts completely.
- 5. Mix the cooked dal into the spinach mixture and stir well to combine evenly.
- 6. In a bowl, prepare a dough by combining rice flour, water, and a pinch of salt, kneading until smooth.
- 7. Divide the dough into small balls and roll them out into thin wraps using a rolling pin.
- 8. Heat a flat pan and cook each wrap for 1-2 minutes on each side until lightly golden and cooked through.
- 9. In a small bowl, whisk together yogurt, lemon juice, and chopped coriander to make a tangy dressing.
- 10. Place the spinach and lentil mixture onto each wrap, drizzle with the yogurt dressing, and roll tightly.
- 11. Serve the wraps warm with extra yogurt dressing on the side for dipping.
