About this recipe

Smoky and flavorful tandoori marinated tofu with vibrant vegetables, grilled to perfection and served with a tangy mint chutney.

Ingredients

  • - Fresh Tofu
  • 1 piece Yellow Bell Pepper
  • 2 pcs Zucchini
  • - Rice Flour
  • 25 g Ginger Garlic Paste
  • 20 g Turmeric Powder
  • - Red Chilli
  • 45 g Garam Masala
  • 50 g Cumin Powder
  • 250 ml Lemon Juice Concentrate
  • 100 g Coriander Leaves
  • 250g Green Chilli
  • 100 g Salt

Instructions

  1. 1. Cut the tofu into cubes and the vegetables into bite-sized pieces for easy skewering.
  2. 2. In a bowl, mix hung curd, ginger garlic paste, turmeric, red chili powder, garam masala, cumin, lemon juice, and salt to make the marinade.
  3. 3. Add tofu and vegetables to the marinade, ensuring they are evenly coated, then marinate for 20 minutes.
  4. 4. Prepare skewers by threading tofu and vegetables alternately, ensuring a mix of colors and flavors.
  5. 5. Heat a grill pan and brush it lightly with vegetable oil to prevent sticking.
  6. 6. Place skewers on the pan and cook on medium heat, turning occasionally for even grilling.
  7. 7. Grind mint leaves, coriander leaves, green chilies, lemon juice, salt, and a splash of water to make a smooth mint chutney.
  8. 8. Remove skewers from the pan once they are charred and cooked through, approximately 8-10 minutes.
  9. 9. Serve the tandoori skewers hot with the fresh mint chutney on the side for dipping.
