  • 100 g Quinoa
  • 200 ml Coconut Milk
  • 250 ml Lemon Juice Concentrate
  • 300 g Ginger Paste
  • - Garlic Paste
  • 135 g Nut Dry Fruit Mix - Tandoori Masala
  • 20 g Turmeric Powder
  • - Red Chilli
  • 250 g Cucumber
  • - Coriander Powder
  • 250g Green Chilli
  • 250 ml Olive Oil
  • 100 g Salt
  • 1pc Watermelon

Instructions

  1. 1. Rinse the quinoa thoroughly under cold water to remove bitterness.
  2. 2. In a saucepan, bring 250 ml of water to a boil, add rinsed quinoa, and cook for 15 minutes until fluffy.
  3. 3. Cut the tofu into cubes and pat them dry with a paper towel to remove excess moisture.
  4. 4. In a bowl, mix coconut milk, ginger paste, garlic paste, tandoori masala, turmeric, red chili powder, and salt.
  5. 5. Marinate the tofu cubes in the spice mixture for 10 minutes to absorb flavors.
  6. 6. Heat olive oil in a skillet over medium heat and pan-fry the marinated tofu until golden on all sides.
  7. 7. Blend mint leaves, cilantro, green chili, lemon juice, and a pinch of salt into a smooth chutney.
  8. 8. Slice cucumber thinly and set aside for a refreshing topping.
