Ingredients
- 100 g Quinoa
- 200 ml Coconut Milk
- 250 ml Lemon Juice Concentrate
- 300 g Ginger Paste
- - Garlic Paste
- 135 g Nut Dry Fruit Mix - Tandoori Masala
- 20 g Turmeric Powder
- - Red Chilli
- 250 g Cucumber
- - Coriander Powder
- 250g Green Chilli
- 250 ml Olive Oil
- 100 g Salt
- 1pc Watermelon
Instructions
- 1. Rinse the quinoa thoroughly under cold water to remove bitterness.
- 2. In a saucepan, bring 250 ml of water to a boil, add rinsed quinoa, and cook for 15 minutes until fluffy.
- 3. Cut the tofu into cubes and pat them dry with a paper towel to remove excess moisture.
- 4. In a bowl, mix coconut milk, ginger paste, garlic paste, tandoori masala, turmeric, red chili powder, and salt.
- 5. Marinate the tofu cubes in the spice mixture for 10 minutes to absorb flavors.
- 6. Heat olive oil in a skillet over medium heat and pan-fry the marinated tofu until golden on all sides.
- 7. Blend mint leaves, cilantro, green chili, lemon juice, and a pinch of salt into a smooth chutney.
- 8. Slice cucumber thinly and set aside for a refreshing topping.
- 9. Serve quinoa in bowls, topped with crispy tofu, cucumber slices, and mint chutney.
- 10. Garnish with extra cilantro leaves or a squeeze of lemon juice for added freshness.
