- 300 g Nutrich Chicken Thigh Boneless
- - DELI QUINOA/BASMATI RICE 1KG
- 1 Bunch Mint Leaves (Pudina)
Instructions
- 1. Cut the chicken breast into bite-sized cubes and set aside in a mixing bowl.
- 2. In the bowl, mix hung curd, lemon juice, ginger garlic paste, chili powder, turmeric, cumin powder, garam masala, and salt.
- 3. Coat the chicken cubes thoroughly with the marinade and let them rest for 20 minutes.
- 4. Rinse the rice well under cold water and soak it for 10 minutes, then drain.
- 5. Heat a pan with a tablespoon of oil and cook the marinated chicken pieces until golden brown and cooked through, about 8-10 minutes.
- 6. Remove the chicken from the pan and set aside, keeping it warm.
- 7. In the same pan, add the drained rice and sauté for 2 minutes to toast it lightly.
- 8. Add 300 ml of water, a pinch of salt, and half of the chopped mint leaves to the rice, stirring to combine.
- 9. Bring the rice to a boil, then cover the pan and reduce the heat to low. Let it simmer for 12-15 minutes until the rice is tender and the water is absorbed.
- 10. Fluff the rice with a fork and mix in the remaining fresh mint leaves for added flavor.
- 11. Serve the minted rice on a plate with the tandoori spiced chicken bites arranged on top.
