Ingredients

  • 300 g Nutrich Chicken Thigh Boneless
  • - DELI QUINOA/BASMATI RICE 1KG
  • 1 Bunch Mint Leaves (Pudina)

Instructions

  1. 1. Cut the chicken breast into bite-sized cubes and set aside in a mixing bowl.
  2. 2. In the bowl, mix hung curd, lemon juice, ginger garlic paste, chili powder, turmeric, cumin powder, garam masala, and salt.
  3. 3. Coat the chicken cubes thoroughly with the marinade and let them rest for 20 minutes.
  4. 4. Rinse the rice well under cold water and soak it for 10 minutes, then drain.
  5. 5. Heat a pan with a tablespoon of oil and cook the marinated chicken pieces until golden brown and cooked through, about 8-10 minutes.
  6. 6. Remove the chicken from the pan and set aside, keeping it warm.
  7. 7. In the same pan, add the drained rice and sauté for 2 minutes to toast it lightly.
  8. 8. Add 300 ml of water, a pinch of salt, and half of the chopped mint leaves to the rice, stirring to combine.
  9. 9. Bring the rice to a boil, then cover the pan and reduce the heat to low. Let it simmer for 12-15 minutes until the rice is tender and the water is absorbed.
  10. 10. Fluff the rice with a fork and mix in the remaining fresh mint leaves for added flavor.
  11. 11. Serve the minted rice on a plate with the tandoori spiced chicken bites arranged on top.
  12. 12. Garnish with additional mint leaves or a squeeze of lemon if desired before serving.
