Instructions

  1. 1. Wash the lamb chunks thoroughly and pat them dry using a clean kitchen towel.
  2. 2. In a bowl, mix hung curd, Suhana Dal Makhani Spice Mix, ginger paste, lemon juice, mustard oil, and salt to create the tandoori marinade.
  3. 3. Add the lamb chunks to the marinade, ensuring each piece is coated well. Cover and refrigerate for 20 minutes.
  4. 4. Soak the wooden skewers in water for 10 minutes to prevent burning during grilling.
  5. 5. Thread the marinated lamb chunks onto the soaked skewers carefully, leaving some space between each piece.
  6. 6. Heat a grill pan or tawa over medium heat and drizzle a little mustard oil to prevent sticking.
  7. 7. Place the skewers on the hot grill and cook for 8-10 minutes, rotating frequently for even cooking and char marks.
  8. 8. While the lamb skewers cook, prepare the mint chutney by blending mint leaves, coriander leaves, green chilies, lemon juice, and salt into a smooth paste.
  9. 9. Once the skewers are cooked, remove them from the grill and let them rest for 2 minutes before serving.
  10. 10. Serve the tandoori lamb skewers hot with the mint chutney on the side for dipping.
