A delightful Jain-friendly tomato preserve made with a blend of sugars and lemon, perfect as a dinner accompaniment. This recipe avoids root vegetables and adheres to Jain dietary guidelines.
Ingredients
- 500 g Pluckk Organic Hybrid Tomatoes
- 250 ml Dabur Hommade Lemon Juice (Bottle)
- 175 g Lemon - Imported
- 500 g Uttam Sugar White Sugar Cubes
- 1 kg Whole Farm Brown Sugar
- 750 ml Catch Clear Lemon N Lime Flavoured Water
Instructions
- 1. Blanch 1.5 kg of tomatoes in boiling water for 1-2 minutes, then transfer them to an ice bath. Peel off the skins and set the tomatoes aside.
- 2. In a large pot, combine 3 cups of sugar, 1/2 cup of brown sugar, 1 cup of water, 2 tablespoons of lemon juice, and the zest of 1 lemon. Stir well to dissolve the sugars.
- 3. Bring the mixture to a boil over medium heat and let it simmer for 15 minutes, stirring occasionally, until the syrup thickens slightly.
- 4. Add the peeled tomatoes to the syrup and continue cooking on low heat for about 50 minutes, stirring gently to avoid breaking the tomatoes. Skim off any foam that forms on the surface.
- 5. Once the tomatoes appear translucent and the mixture reaches a jam-like consistency, remove from heat. Carefully ladle the preserve into sterilized jars, seal tightly, and let cool before storing.
