Ingredients
- 5Ltr Vittorio Pomace Olive Oil
- 100 g Sambar Onion Peeled
- 250 g Organically Grown Green Capsicum
- 200 g Pineapple Chunks
- 500 G Kinwaaquinoa
- 125 g Yellow Bell Pepper
- 250 g Radish White (Mooli)
- 200 ml Japanese Choice Japanese Style Soy Sauce
- 80 g Urban Platter Cayenne Pepper Powder
- 1 pack (100 g) Eastern Dry Ginger Powder
Instructions
- 1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 diced onion and cook until softened, about 5 minutes. Remove from the skillet and set aside.
- 2. Cook 1 1/2 cups of quinoa according to the package directions and set aside.
- 3. In the same skillet, heat an additional 1 tablespoon of olive oil over medium heat. Add 1 diced onion, 1 diced green bell pepper, and 1 diced yellow bell pepper. Sauté for 5-7 minutes, or until the vegetables are tender.
- 4. Stir in 1 cup of diced pineapple, 1/2 cup of soy sauce, 1 teaspoon of ginger powder, and a pinch of cayenne pepper. Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes, allowing the sauce to thicken slightly.
- 5. Add the cooked quinoa to the skillet and stir until everything is evenly combined and heated through.
- 6. Serve the stir-fry hot, garnished with additional pineapple or a sprinkle of cayenne pepper if desired.
