Ingredients

  • 100 g Curryit Tamarind Paste
  • 250 g Tauffa Anjeer / Dried Figs
  • 500 g Uttam Sugar Brown Sugar Cubes
  • 50 g Minitz Garam Masala
  • 100 g Jk Jeera Powder / Cumin Powder
  • 80 g Urban Platter Cayenne Pepper Powder
  • 100 g Tata Sampann Whole Spices Cumin Seed

Instructions

  1. 1. In a large pot, combine 2 cups of chopped dates, 1/4 cup of tamarind pulp, 1 cup of brown sugar, 1 teaspoon of garam masala, 1 teaspoon of cumin powder, 1/2 teaspoon of asafetida, 1/2 teaspoon of cayenne pepper, and 4 cups of water.
  2. 2. Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar and blend the spices.
  3. 3. Reduce the heat to low and let the mixture simmer for 15-20 minutes, stirring occasionally, until the dates are soft and the flavors are well combined.
  4. 4. Remove the pot from heat and allow the mixture to cool slightly.
  5. 5. Strain the mixture through a fine sieve to remove any solids, pressing down with a spoon to extract as much liquid as possible. Alternatively, puree the mixture in a blender and then strain it for a smoother texture.
  6. 6. Transfer the strained chutney to a serving bowl or airtight container. Serve as a dip or accompaniment with your favorite Jain-friendly dishes.
