Ingredients
- 2 Pieces Daily Apple
- 250 g Organically Grown Green Capsicum
- 125 g Red Bell Pepper (Lal Shimla Mirchi)
- 500 g Pluckk Organic Hybrid Tomatoes
- 200 g Sambar Onion Peeled (Sambar Kanda)
- 1 kg Tata Salt, Iodised Namak, Vacuum Evaporated Salt
- 500 g Uttam Sugar White Sugar Cubes
- 2 x 170 ml Masterchow White Vinegar - Pack Of 2
Instructions
- 1. Wash and prepare all vegetables. Core and chop 8 apples, deseed and chop 4 green peppers, chop 4 red peppers, finely dice 8 tomatoes, and mince 8 onions.
- 2. Combine the chopped apples, green peppers, red peppers, tomatoes, and onions in a large mixing bowl.
- 3. Sprinkle 4 tablespoons of salt over the mixture, stir well, and let it sit for 5 minutes to draw out excess moisture.
- 4. Drain off the excess liquid from the vegetable mixture using a colander or sieve.
- 5. In a separate bowl, mix 3 cups of sugar with 2 cups of vinegar and 1 cup of water until the sugar dissolves completely.
- 6. Pour the sugar-vinegar mixture over the drained vegetables and stir thoroughly to combine.
- 7. Transfer the relish into sterilized jars, leaving some space at the top. Seal the jars tightly and store in the refrigerator or process in a hot water bath for long-term storage.
