- 250 g Tendercuts Basa Boneless Fillet F&S
- 100 g Tamarind Paste
- 250 g Jasmine Rice
Instructions
- 1. Rinse the fish fillets and pat them dry with a paper towel.
- 2. In a small bowl, mix tamarind pulp, soy sauce, honey, red chili flakes, and grated ginger to make the glaze.
- 3. Coat the fish fillets evenly with rice flour, ensuring a thin, uniform layer.
- 4. Heat 2 tbsp of canola oil in a pan over medium heat and pan-fry the fish until golden brown on both sides. Remove and set aside.
- 5. In the same pan, add the prepared tamarind glaze and cook it for 2-3 minutes until slightly thickened.
- 6. Return the fish to the pan and coat it generously with the tamarind glaze. Let it simmer for 2 minutes.
- 7. Rinse jasmine rice thoroughly and cook it with 300 ml of water and a pinch of salt until tender.
- 8. While the rice cooks, heat 1 tbsp of sesame oil in a wok and stir-fry sliced carrots, broccoli florets, and chopped spring onions.
- 9. Season the vegetables with salt and black pepper, and stir-fry for 4-5 minutes until slightly tender but crisp.
- 10. Fluff the cooked jasmine rice with a fork and divide it between two plates.
- 11. Place the glazed fish fillets over the rice and arrange the stir-fried vegetables on the side.
- 12. Garnish with additional spring onions or sesame seeds, if desired.
- 13. Serve the dish immediately to enjoy the balance of flavors.
