Ingredients
- 500 G Ridge Gourd/Jhinge Tori(500Gm)
- 200 g Green Peas
- - Red Chilli
- 20G Curry Leaves
- 250 ml Coconut Milk
- NaN Kodo Millet
- 500 ml Water
- 200 ml Mustard Oil
- 250g Ginger
- 20 g Turmeric Powder
- 10G Salt
- 50 g Cumin Powder
Instructions
- Step 1: In a heavy-bottomed pot, heat 1 tablespoon of mustard oil. Add panch phoran and let it splutter.
- Step 2: Add grated ginger and sauté for 30 seconds until aromatic. Add the soaked millet, drumsticks, ridge gourd, green peas, turmeric powder, and salt.
- Step 3: Pour 700 ml water into the pot. Stir well, cover, and cook on medium heat for 25-30 minutes or until the millet is soft and the vegetables are tender. Stir occasionally to ensure even cooking.
- Step 4: While the khichdi cooks, prepare the spiced coconut milk sauce. In a separate pan, heat the remaining mustard oil. Add curry leaves, cumin powder, red chili powder, and salt.
- Step 5: Pour the coconut milk into the pan and simmer gently for 5 minutes, stirring frequently. Avoid boiling to preserve the creamy texture.
- Step 6: Once the khichdi is cooked, drizzle with lime juice and mix gently.
- Step 7: Serve the millet and drumstick khichdi hot, with the spiced coconut milk sauce on the side for drizzling or dipping.
