Spinach and White Bean Dinner Soup recipe

Ingredients

  • 250 g Spinach - Chopped
  • 200 g Sambar Onion Peeled (Sambar Kanda)
  • 100 g Garlic - Single Clove
  • 200 g Old Hill Parmesan Cheese
  • 200 g Hommade Tomato Puree
  • 100 g Catch Sprinklers - Black Pepper Powder
  • 1 kg Akar Powder Salt
  • 500 G Kinwaaquinoa
  • 16 g Orika Oregano

Instructions

  1. 1. In a 4-quart slow cooker, combine 1 can of homemade tomato puree, 1/2 cup of diced sambar onion, 1/2 cup of kinwaaquinoa, 2 minced garlic cloves, 1 teaspoon of dried oregano, 1/4 teaspoon of black pepper, and 1/8 teaspoon of salt.
  2. 2. Cover and cook on low for 6-7 hours, stirring occasionally, until the quinoa is tender and the flavors are well combined.
  3. 3. Add 7 cups of chopped spinach to the slow cooker and stir well. Cover and cook for an additional 15 minutes, or until the spinach is wilted.
  4. 4. Ladle the soup into bowls and sprinkle each serving with 1/4 cup of grated parmesan cheese.
  5. 5. Serve hot and enjoy a warm, satisfying dinner. If freezing, allow the soup to cool completely before transferring to freezer-safe containers. To reheat, thaw in the refrigerator overnight and warm in a saucepan, adding a little water if needed.
