Instructions

  1. 1. Preheat your oven to 350 degrees and line two cookie sheets with parchment paper or a silicone mat.
  2. 2. In a frying pan, cook 2 lbs of soya chunks over medium heat until fully browned and cooked through, about 5-7 minutes. Set aside to cool slightly.
  3. 3. In a large mixing bowl, combine the cooked soya chunks, 2 cups of cooked quinoa, 4 tablespoons of chia seeds mixed with 12 tablespoons of water, 4 cups of chopped spinach, 1 cup of chopped parsley, 1 cup of diced pineapple, 1/4 cup of oats, and 2 1/2 cups of whole wheat flour. Mix thoroughly until the mixture is sticky and well combined.
  4. 4. Take a large handful of the mixture and form it into a dome shape. Place it on the prepared cookie sheet and gently flatten it slightly. Repeat with the remaining mixture.
  5. 5. Bake in the preheated oven for 30 minutes, or until the domes are firm and lightly golden on top.
  6. 6. Remove from the oven and let cool for a few minutes before serving. Enjoy your hearty and nutritious bake!
