Ingredients
- 1 kg Basmati Rice
- 1 pack (200 g) Godrej Real Good Medium Prawns Peeled & Deveined (Freshly Frozen)
- 250 ml Real Thai Unsweetened Coconut Milk
Instructions
- 1. Rinse the rice thoroughly under running water until the water runs clear, then soak for 15 minutes.
- 2. Heat the vegetable oil in a large pan over medium heat and add the garlic powder, ginger powder, turmeric, and red chili powder.
- 3. Toss the prawns in the spice mixture and cook for 5 minutes until they turn pink and are fully cooked through.
- 4. Remove the prawns from the pan and set aside, leaving the residual oil in the pan.
- 5. Add the soaked rice to the pan along with coconut milk, water, coriander powder, and rock salt. Stir gently to combine.
- 6. Cover the pan with a lid and cook the rice on low heat for 12–15 minutes until tender and fluffy.
- 7. In a separate small pan, steam the frozen mixed vegetables with a sprinkle of black pepper and a pinch of salt for 5–6 minutes.
