Instructions

  1. 1. Cut the chicken breast into bite-sized pieces and set aside in a bowl.
  2. 2. Prepare the marinade by mixing yogurt, ginger paste, garlic paste, red chili powder, turmeric powder, cumin powder, lemon juice, and salt in a bowl.
  3. 3. Add the chicken pieces to the marinade, ensuring they are evenly coated. Cover and refrigerate for 20 minutes.
  4. 4. While the chicken marinates, blend mint leaves, coriander leaves, green chilies, onions, lemon juice, salt, and water into a smooth chutney.
  5. 5. Preheat a grill pan or tawa and brush it with cooking oil to prevent sticking.
  6. 6. Thread the marinated chicken pieces onto skewers, leaving small gaps between them for even cooking.
  7. 7. Place the skewers on the grill pan and cook on medium heat for 10-12 minutes, turning occasionally for a golden and charred texture.
  8. 8. Ensure the chicken is cooked through by cutting one piece to check the inside is white and tender.
  9. 9. Remove the skewers from the grill and let them rest for 2 minutes to retain juices.
  10. 10. Serve the grilled chicken skewers hot with the freshly prepared mint chutney.
