Ingredients
- 100 g Coriander Leaves
- 100 g Garlic
- 500 g Onion
- 500 g Tomato - Hybrid
- 50 g Asafoetida Powder
- 100 g Ginger
- 200 g Table Salt
- 100 g Red Mustard Seeds
- 100 g Jeera
- 20 g Turmeric Powder
- - Red Chilli Powder
- 500 Ml Champion Oil
Instructions
- 1. Rinse 1 cup of lentils (masoor dal or toor dal) thoroughly under cold water until the water runs clear.
- 2. In a medium-sized pot, add the rinsed lentils and 3 cups of water. Bring to a boil over medium-high heat.
- 3. Once boiling, reduce the heat to low, cover the pot, and let the lentils simmer for 20-25 minutes or until they are soft and fully cooked.
- 4. While the lentils are cooking, finely chop 1 medium-sized onion, 2 garlic cloves, 1 green chili, and 1 small tomato.
- 5. Heat 2 tablespoons of oil or ghee in a separate pan over medium heat.
- 6. Add 1/2 teaspoon of mustard seeds and let them splutter.
- 7. Add 1/2 teaspoon of cumin seeds and sauté for a few seconds until fragrant.
- 8. Add the chopped onion, garlic, and green chili to the pan. Sauté until the onions turn translucent.
- 9. Stir in the chopped tomato and cook until it softens and releases its juices.
- 10. Add 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, and a pinch of asafoetida (hing). Mix well.
- 11. Once the lentils are cooked, mash them slightly with the back of a spoon or a masher to thicken the soup.
- 12. Add the sautéed onion-tomato mixture to the cooked lentils and stir to combine.
- 13. Add salt to taste and 1 cup of water to adjust the consistency of the soup. Bring to a gentle simmer.
- 14. Let the soup simmer for 5-7 minutes, allowing the flavors to meld together.
- 15. Garnish with freshly chopped coriander leaves and a squeeze of lemon juice.
- 16. Serve hot with steamed rice or warm roti.
