A flavorful snack with spiced tofu and stir-fried vegetables wrapped in soft rice flour rotis. Perfect for a protein-packed treat.
Ingredients
- - Fresh Tofu
- - Rice Flour
- 1 piece Yellow Bell Pepper
- 250 g Carrot
- 500 g Onion
- 100 g Coriander Leaves
- - Red Chilli
- 20 g Turmeric Powder
- 50 g Cumin Powder
- 100 g Salt
- 200 ml Mustard Oil
- 1pc Watermelon
Instructions
- 1. Slice tofu into thin strips and marinate with chili powder, turmeric, cumin powder, and salt for 10 minutes.
- 2. In a mixing bowl, combine rice flour, water, and a pinch of salt to create a soft dough for rotis.
- 3. Roll out the rice flour dough into thin rotis and cook on a hot pan until lightly golden on both sides.
- 4. Heat oil in a pan and sauté sliced onions, capsicum, and carrots until tender but still slightly crisp.
- 5. Add marinated tofu to the pan and stir-fry for 5 minutes until golden and well-coated with spices.
- 6. Sprinkle chopped coriander leaves over the tofu and vegetables and mix well.
- 7. Place the stir-fried tofu and vegetables inside the cooked rotis and roll them tightly.
- 8. Heat the rolled kathi rolls on the pan for 2 minutes to crisp up the outside slightly.
- 9. Cut the rolls into halves and serve warm with a side of mint chutney or yogurt dip.
