Ingredients

  • - DELI QUINOA/BASMATI RICE 1KG
  • 100 g Diet Tofu Masala Tofu
  • - Frozen Mixed Vegetables
  • 750 g Priya Sunflower Oil
  • 110 g Unpeeled Garlic Cloves
  • 100 g Catch Super Garam Masala
  • loose Ginger
  • 1 kg Beetroot
  • 250 ml Real Thai Unsweetened Coconut Milk
  • 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
  • 1 Bunch Coriander Leaves ( Kottambari Soppu )

Instructions

  1. 1. Wash the rice thoroughly and soak it in water for 15 minutes.
  2. 2. Heat oil in a pan and sauté minced garlic until aromatic.
  3. 3. Add diced tofu to the pan and cook until golden brown on all sides.
  4. 4. Stir in garam masala, ginger powder, and grated fresh turmeric.
  5. 5. Add frozen mixed vegetables and stir-fry for 5 minutes.
  6. 6. Pour in coconut milk and mix well, letting it simmer for 2 minutes.
  7. 7. Drain the soaked rice and add it to the pan along with 300 ml of water.
  8. 8. Season with salt and mix everything together thoroughly.
  9. 9. Cover the pan with a lid and cook on low heat until the rice is fully cooked and the water is absorbed.
  10. 10. Once cooked, fluff the rice gently using a fork.
  11. 11. Garnish with freshly chopped coriander leaves before serving.
