Ingredients
- 100 g Quinoa
- 200 ml Coconut Milk
- - Green Peas
- 500 g Onion
- 100 g Garlic
- loose Ginger
- 100 g Jeera
- 20 g Turmeric Powder
- - Red Chilli
- 100 g Dhaniya Powder
- 100 g Salt
- - Coriander Powder
Instructions
- 1. Rinse the quinoa thoroughly under cold water and set aside to drain.
- 2. Cut the tofu into small cubes and lightly pan-fry in oil until golden on all sides.
- 3. Finely chop the onion, garlic, and ginger, then sauté in a large pot until fragrant.
- 4. Add cumin seeds, turmeric, chili powder, and coriander to the pot, stirring well to toast the spices.
- 5. Dice the carrots and add them along with green peas to the pot, cooking for 3 minutes.
- 6. Pour in the coconut milk and stir well, allowing the mixture to simmer gently.
- 7. Add the rinsed quinoa to the pot along with 200 ml of water and mix thoroughly.
- 8. Season with salt and bring the mixture to a boil, then reduce heat and cover the pot.
- 9. Let the quinoa simmer for 15 minutes, stirring occasionally to prevent sticking.
- 10. Once the quinoa is cooked and fluffy, fold in the pan-fried tofu and mix gently.
- 11. Garnish with freshly chopped cilantro before serving warm.
