Ingredients
- 1 kg Sweet Potato
- - Rice Flour
- 100 g Coriander Leaves
- 250g Green Chilli
- loose Ginger
- 50 g Cumin Powder
- 20 g Turmeric Powder
- 100 g Salt
- - Milky Mist Skyr Plain Yogurt
- 250 ml Lemon Juice Concentrate
Instructions
- 1. Peel and dice the sweet potato into small cubes and boil until tender, then mash thoroughly.
- 2. Rinse and cook the yellow lentils until soft, then drain any excess water and mash lightly.
- 3. Mix the mashed sweet potato and lentils in a bowl with rice flour, green chili, ginger, cumin, turmeric, and salt.
- 4. Add finely chopped coriander leaves into the mixture and knead into a firm dough-like consistency.
- 5. Shape the mixture into small croquettes or patties using your hands.
- 6. Heat vegetable oil in a frying pan over medium heat.
- 7. Fry the croquettes in batches, ensuring they turn golden brown on all sides, then place on paper towels to drain excess oil.
- 8. In a separate bowl, whisk yogurt with lemon juice and a pinch of salt to create the tangy dip.
