Spiced Rajma and Spinach Rice recipe

Ingredients

  • Pcs Everest Rajma Masala 50g
  • 500 Gms Organic Sonamasuri White Rice
  • 500 g Onion
  • - Baby Tomatoes
  • 100 g Garlic
  • loose Ginger
  • 100 g Jeera
  • 20 g Turmeric Powder
  • - Red Chilli
  • 45 g Garam Masala
  • - Bay Leaf
  • 100 g Coriander Leaves
  • 100 g Salt
  • 1pc Watermelon

Instructions

  1. 1. Wash and soak the rajma in water overnight or for at least 8 hours.
  2. 2. Pressure cook the soaked rajma with a pinch of salt and enough water for 15 minutes until soft.
  3. 3. Cook the rice separately by boiling it in 300 ml water with a pinch of salt until tender.
  4. 4. Heat vegetable oil in a pan and add cumin seeds and bay leaf; sauté until aromatic.
  5. 5. Add finely chopped onions, garlic, and ginger to the pan, cooking until golden brown.
  6. 6. Add chopped tomatoes, turmeric, red chili powder, and a pinch of salt, cooking until the tomatoes soften.
  7. 7. Stir in the cooked rajma and let it simmer for 5 minutes to absorb the flavors.
  8. 8. Add chopped spinach to the pan and cook until it wilts, stirring occasionally.
  9. 9. Sprinkle garam masala over the mixture and mix well before turning off the heat.
  10. 10. Serve the spiced rajma and spinach over the cooked rice, garnished with fresh coriander leaves.
