Spiced Pumpkin and Moong Dal Stew recipe

Ingredients

  • 400-600 g Pumpkin
  • 1 kg Yellow Moong Dal
  • 500 g Onion
  • - Tomato Ketchup
  • 100 g Garlic
  • loose Ginger
  • 250g Green Chilli
  • 20 g Turmeric Powder
  • 100 g Jeera
  • - Red Chilli
  • 100 g Salt
  • - Coriander Powder
  • 1pc Watermelon

Instructions

  1. 1. Wash the moong dal thoroughly and soak it in water for 15 minutes.
  2. 2. Peel and dice the pumpkin into small cubes, and chop the onions, tomatoes, garlic, ginger, and green chilies.
  3. 3. Heat oil in a deep pan and add cumin seeds; let them splutter for a few seconds.
  4. 4. Add chopped onions, garlic, and ginger to the pan, and sauté until the onions turn golden brown.
  5. 5. Mix in the tomatoes, green chilies, turmeric, coriander powder, red chili powder, and salt; cook until the tomatoes soften.
  6. 6. Add the diced pumpkin and soaked moong dal to the pan, stirring well to coat with the spices.
  7. 7. Pour in 500 ml of water, bring to a boil, and then simmer on low heat for 20 minutes until the dal and pumpkin are tender.
  8. 8. Mash the pumpkin lightly with the back of a spoon to create a creamy texture while preserving some chunks.
  9. 9. Adjust the seasoning if needed, and garnish with freshly chopped coriander leaves.
  10. 10. Serve hot with steamed rice or enjoy on its own for a wholesome lunch.
