A hearty and aromatic stew combining soft pumpkin chunks and protein-rich moong dal, simmered with spices for a comforting lunch.
Ingredients
- 400-600 g Pumpkin
- 1 kg Yellow Moong Dal
- 500 g Onion
- - Tomato Ketchup
- 100 g Garlic
- loose Ginger
- 250g Green Chilli
- 20 g Turmeric Powder
- 100 g Jeera
- - Red Chilli
- 100 g Salt
- - Coriander Powder
- 1pc Watermelon
Instructions
- 1. Wash the moong dal thoroughly and soak it in water for 15 minutes.
- 2. Peel and dice the pumpkin into small cubes, and chop the onions, tomatoes, garlic, ginger, and green chilies.
- 3. Heat oil in a deep pan and add cumin seeds; let them splutter for a few seconds.
- 4. Add chopped onions, garlic, and ginger to the pan, and sauté until the onions turn golden brown.
- 5. Mix in the tomatoes, green chilies, turmeric, coriander powder, red chili powder, and salt; cook until the tomatoes soften.
- 6. Add the diced pumpkin and soaked moong dal to the pan, stirring well to coat with the spices.
- 7. Pour in 500 ml of water, bring to a boil, and then simmer on low heat for 20 minutes until the dal and pumpkin are tender.
- 8. Mash the pumpkin lightly with the back of a spoon to create a creamy texture while preserving some chunks.
- 9. Adjust the seasoning if needed, and garnish with freshly chopped coriander leaves.
- 10. Serve hot with steamed rice or enjoy on its own for a wholesome lunch.
