- 100 g Quinoa
- 125 ml Flavoured Yogurt Drink - Mango
- - Garlic Paste
- 300 g Ginger Paste
- - Red Chilli
- 20 g Turmeric Powder
- 50 g Cumin Powder
- - Coriander Powder
- 200 ml Mustard Oil
- 100 g Salt
- 250 ml Lemon Juice Concentrate
- 1pc Watermelon
Instructions
- 1. Rinse the mutton chunks thoroughly and pat them dry with a clean towel.
- 2. In a bowl, mix yogurt, garlic paste, ginger paste, chili powder, turmeric, cumin, coriander, salt, and lemon juice into a smooth marinade.
- 3. Coat the mutton chunks evenly with the marinade and let them rest for 20 minutes.
- 4. While the mutton marinates, rinse the quinoa under running water to remove bitterness.
- 5. Boil water in a saucepan, add quinoa, and simmer until cooked and fluffy, approximately 15 minutes.
- 6. Finely chop mint leaves and mix them into the cooked quinoa, adding a pinch of salt for flavor.
- 7. Soak wooden skewers in water for 10 minutes to prevent burning during grilling.
- 8. Thread marinated mutton chunks onto the soaked skewers, ensuring even spacing.
- 9. Heat oil in a grill pan and place the skewers, turning occasionally for even cooking.
- 10. Grill the mutton until golden brown and cooked through, approximately 10 minutes.
- 11. Serve the skewers hot with a generous portion of minted quinoa on the side.
