Ingredients
- 1 kg Basmati Rice
- - Baby Tomatoes
- 250g Green Chilli
- 100 g Jeera
- 20 g Turmeric Powder
- - Red Chilli
- 45 g Garam Masala
- - Bay Leaf
- 100G Oleo
- - Coriander Powder
- 1pc Watermelon
- 100 g Salt
Instructions
- 1. Rinse the mutton shanks thoroughly under running water and set aside.
- 2. Heat oil in a deep pan, add cumin seeds, bay leaf, and let them sizzle for a few seconds.
- 3. Add finely chopped onions and sauté until golden brown, stirring occasionally.
- 4. Mix in ginger-garlic paste and green chilies, cooking for 1-2 minutes to release their aroma.
- 5. Add chopped tomatoes and cook until soft, creating a thick masala base.
- 6. Sprinkle turmeric, red chili powder, coriander powder, and salt, mixing well.
- 7. Add the mutton shanks and sear them until lightly browned, coating them with the spice mixture.
- 8. Pour in water, cover the pan, and let the mutton simmer on low heat for 20-25 minutes until tender.
- 9. In another pan, heat oil and toast cumin seeds before adding rinsed basmati rice.
- 10. Add water to the rice, season with salt, and cook until the rice is fluffy and aromatic.
- 11. Stir garam masala into the mutton curry and garnish with chopped coriander leaves.
- 12. Serve the spiced mutton curry alongside the fragrant jeera rice, ensuring equal portions.
