Ingredients
- 100 g Coriander Leaves
- 1 kg Basmati Rice
- 250 g Mutton
- - Baby Tomatoes
- 125 ml Flavoured Yogurt Drink - Mango
- 250g Green Chilli
- 100G Biryani Masala (100g)
- 100 g Green Elaichi
- 200 ml Sesame Oil

- 20 g Turmeric Powder
- 100 g Jeera
- 50 g Cloves
- 100 g Salt
- - Cumin Seed
- - Bay Leaf
Instructions
- 1. Wash and soak the basmati rice in water for 30 minutes, then drain and set aside.
- 2. Heat oil in a large pot, add cumin seeds, bay leaves, cardamom, and cloves, and let them sizzle.
- 3. Add thinly sliced onions and sauté until golden brown, stirring occasionally to avoid burning.
- 4. Mix in ginger-garlic paste, chopped tomatoes, and cook until the tomatoes are soft and form a paste.
- 5. Add the mutton pieces, biryani masala, turmeric, and chili powder, and cook for 10 minutes until well coated.
- 6. Stir in yogurt and cook for another 5 minutes until the mutton releases its juices.
- 7. Pour water into the pot, cover, and simmer for 15 minutes until the mutton is tender.
- 8. Layer the soaked rice over the mutton mixture without stirring, and sprinkle mint and coriander leaves.
- 9. Cover the pot with a tight lid and cook on low heat for 20 minutes to steam the rice.
- 10. Turn off the heat and let the biryani rest for 10 minutes before gently mixing it.
- 11. For the raita, blend yogurt with chopped mint leaves, green chilies, and a pinch of salt.
- 12. Serve the biryani with the prepared mint raita for a delicious and balanced meal.
