Ingredients
- 1 piece Yellow Bell Pepper
- - Green Peas
- - Baby Tomatoes
- 100 g Garlic
- loose Ginger
- 50 g Cumin Powder
- 20 g Turmeric Powder
- - Red Chilli
- 100 g Salt
- - Coriander Powder
Instructions
- 1. Wash the bell peppers and cut off the tops to create a cavity for stuffing.
- 2. Rinse the lentils thoroughly and cook them in boiling water until soft, about 10 minutes.
- 3. Finely chop the carrots, onions, tomatoes, garlic, and ginger for the stuffing mix.
- 4. Heat oil in a pan and sauté the onions, garlic, and ginger until fragrant.
- 5. Add the chopped carrots and peas to the pan, cooking until slightly softened.
- 6. Stir in the tomatoes, cooked lentils, and spices (cumin, coriander, turmeric, chili powder, and salt). Cook for 5 minutes.
- 7. Remove the stuffing from heat and let it cool slightly before filling the bell peppers.
- 8. Stuff each bell pepper generously with the lentil and vegetable mixture.
- 9. Preheat the oven to 180°C (356°F) and line a baking tray with parchment paper.
- 10. Place the stuffed bell peppers on the tray and bake for 20-25 minutes until tender.
- 11. Garnish with chopped cilantro leaves before serving.
- 12. Serve hot with a side of tomato sauce or chutney for added flavor.
