Ingredients
- 500 g Toor Dal
- - Baby Tomatoes
- - Tomato Ketchup
- 1 kg Rice
- 200 ml Coconut Milk
- 20 g Turmeric Powder
- - Cumin Seeds 100g
- 100 g Salt
- 200 ml Mustard Oil
- - Coriander Powder
- 1 kg Water Chestnuts
- 1 l Soyabean Oil
Instructions
- 1. Rinse the toor dal thoroughly under running water and soak for 10 minutes.
- 2. Wash the rice and cook it in 400 ml of water until soft and fluffy; set aside.
- 3. Heat vegetable oil in a large pan and add cumin seeds, allowing them to sizzle for 30 seconds.
- 4. Chop the tomatoes finely and add them to the pan along with turmeric and coriander powder.
- 5. Cook the tomatoes for 5 minutes, stirring occasionally, until softened and fragrant.
- 6. Drain the soaked dal and add it to the pan with 500 ml of water and salt; stir well.
- 7. Simmer the dal mixture for 20 minutes, stirring occasionally, until the lentils are cooked and thickened.
- 8. Stir in the coconut milk and cook for another 2 minutes to enhance the creamy texture.
- 9. Garnish the stew with freshly chopped coriander leaves before serving.
- 10. Serve the lentil stew hot with the cooked rice for a wholesome meal.
