Ingredients
- 1 kg Yellow Moong Dal
- 1 Kg Spinach/Palak (Approx 1 Kg)
- 1 Combo Onion, Potato & Desi Tomato
- 250g Green Chilli
- - Grated Coconut
- - Coriander Powder
- - Cumin Seeds / Jeera Seeds-250 Gms
- 20 g Turmeric Powder
- - Red Chilli
- - Rice Flour
- 100 g Salt
- 500 ml Oil (For Frying)
Instructions
- 1. Wash and soak the yellow moong dal in water for 3-4 hours, then drain and grind it into a coarse paste without adding water.
- 2. Rinse and finely chop the spinach leaves, ensuring no excess water remains.
- 3. In a large mixing bowl, combine the lentil paste, chopped spinach, onion, green chilies, grated ginger, and chopped coriander.
- 4. Add cumin seeds, turmeric powder, red chili powder, rice flour, and salt to the mixture, and mix until well combined.
- 5. Heat oil in a shallow frying pan over medium heat, ensuring the oil is hot but not smoking.
- 6. Take small portions of the mixture and shape them into round, flat fritters using your hands or a spoon.
- 7. Carefully place the fritters in the hot oil and fry them until golden brown on one side, then flip and cook the other side.
- 8. Remove the fritters from the pan and place them on paper towels to drain any excess oil.
- 9. Repeat the process with the remaining mixture, ensuring the oil is at the right temperature for each batch.
- 10. Serve the warm fritters with a side of mint chutney or tamarind sauce for dipping.
