Spiced Lentil and Rice Khichdi recipe

Ingredients

  • 1 kg Rice
  • 1 kg Yellow Moong Dal
  • 500 g Onion
  • - Tomato Ketchup
  • 250g Green Chilli
  • loose Ginger
  • - Cumin Seeds / Jeera Seeds-250 Gms
  • 20 g Turmeric Powder
  • 100 g Salt
  • 850 g Sundrop Heart+ Blended Cooking Oil
  • 1 kg Water Chestnuts
  • - Coriander Powder

Instructions

  1. 1. Rinse the rice and lentils thoroughly under cold water and drain.
  2. 2. Finely chop the onion, tomato, green chili, and ginger, and set them aside.
  3. 3. Heat oil in a pan or pressure cooker and add cumin seeds; let them splutter for a few seconds.
  4. 4. Add chopped onions and sauté until they turn golden brown, stirring occasionally.
  5. 5. Stir in the chopped tomato, green chili, and ginger; cook until the tomatoes soften.
  6. 6. Add turmeric powder and mix well with the sautéed ingredients.
  7. 7. Add the rinsed rice and lentils; stir to coat them with the spices and vegetables.
  8. 8. Pour in water and season with salt; stir well to combine everything evenly.
  9. 9. Cover the pan or pressure cooker and cook on medium heat until the rice and lentils are tender.
  10. 10. Once cooked, let it rest for a few minutes and fluff lightly with a spoon before serving.
  11. 11. Serve hot, garnished with a small drizzle of oil or fresh coriander if desired.
