- 1 kg Basmati Rice
- 1 ltr Pansari Tilsari Edible Vegetable Oil
- 500 g Onion
- - Baby Tomatoes
- 110 g Unpeeled Garlic Cloves
- loose Ginger
- 20 g Turmeric Powder
- - Cumin Seeds / Jeera Seeds-250 Gms
- - Red Chilli
- - Frozen Mixed Vegetables
- 100 g Salt
- 1 kg Water Chestnuts
- - Coriander Powder
Instructions
- 1. Rinse the red lentils thoroughly under running water and set them aside to drain.
- 2. Wash the basmati rice, soak it for 20 minutes, and then drain the water.
- 3. Heat vegetable oil in a deep pan, add cumin seeds, and sauté until aromatic.
- 4. Add finely chopped onion and cook until golden brown, stirring occasionally.
- 5. Add minced garlic and ginger, followed by chopped tomatoes, and cook until soft and blended.
- 6. Mix in turmeric, coriander powder, and red chili powder, stirring for 1 minute to combine flavors.
- 7. Add the rinsed lentils and water to the pan, bring to a boil, and reduce heat to simmer.
- 8. Let the lentils cook for 15 minutes, stirring occasionally, until tender and creamy.
- 9. In another pot, cook the soaked rice with 1.5 cups of water and a pinch of salt until fluffy.
- 10. Stir in Frozen Mixed Vegetables to the lentils and simmer for 5 more minutes.
- 11. Adjust salt as needed and turn off the heat, garnishing with fresh coriander leaves.
