A rich and creamy lentil curry simmered in coconut milk and infused with aromatic spices. Perfectly paired with steamed rice for a satisfying lunch.
Ingredients
- 500G Tata Masoor Dal M
- 200 ml Coconut Milk
- 500 g Onion
- - Tomato Ketchup
- loose Ginger
- 100 g Curry Leaves
- 100 g Yellow Mustard Seeds
- 20 g Turmeric Powder
- 50 g Cumin Powder
- - Red Chilli
- 100 g Salt
- - Coriander Powder
- 1 kg Rice
Instructions
- 1. Rinse the masoor dal thoroughly under running water and set aside.
- 2. Heat vegetable oil in a large pan and add mustard seeds until they start to splutter.
- 3. Add curry leaves, finely chopped onion, garlic, and ginger, and sauté until golden brown.
- 4. Stir in chopped tomatoes and cook until they soften and release their juices.
- 5. Add turmeric, cumin, coriander, and red chili powder, and mix well to combine.
- 6. Add the rinsed lentils and 400 ml of water, then bring to a boil.
- 7. Reduce the heat to low, cover, and simmer until the lentils are soft and cooked, about 15 minutes.
- 8. Pour in the coconut milk, stir well, and let it simmer for another 5 minutes.
- 9. Season with salt and adjust spices to taste, then turn off the heat.
- 10. Garnish with freshly chopped coriander leaves before serving.
- 11. Serve hot with freshly steamed rice for a wholesome lunch.
